Double Chocolate Zucchini Bread
1 1/2 cups flour
2 tsp. baking soda
1 tsp. salt
2 tbsp. baking cocoa
1/2 cup oil (I used coconut oil, but you can use vegetable oil or butter if you prefer)
3/4 cups sugar
2 tsp. vanilla
1 1/2 cups shredded zucchini
1/2 cup cold coffee
8 oz – 10 oz chocolate chips (I used 12 oz in this recipe and it seemed like too many, but you be the judge.)
Mix dry ingredients in a bowl and set aside.
Cream together oil of your choice and sugar. Mix in eggs and vanilla.
Add in shredded zucchini, coffee, and dry ingredients and mix until blended.
Finally, mix in chocolate chips and transfer to a greased loaf pan.
Bake at 350* for 45-55 minutes or until a toothpick can be inserted and comes out clean.
